Lazy Day Vegan Ice Cream Bars

It is h-o-t in Northern California lately. In fact, it was so hot when I made these ice cream bars that I had to rush while taking the photos – they melted that fast just sitting on my counter.

I was craving something sweet, but too sweaty and tired to actually go to the grocery store, so I scavenged the cabinets for ingredients. Here’s what I found:

Some leftover coconut milk ice cream, vegan graham crackers and vegan chocolate chips. Hmmm… but something was missing. Peanut butter! Can’t go wrong with that flavor combination, I thought. So I melted the chocolate in the microwave and spread it on the graham crackers.

I topped these with a few dollops of the ice cream, drizzled on some peanut butter (it was hot enough that it was runny, but you could pop yours in the microwave), and popped them in the freezer for about an hour.

You can top them with another graham cracker, but I loved the open-faced goodness :) Enjoy!

Lazy Day Ice Cream Bars

What You Need

  • Graham crackers
  • Vegan ice cream
  • Vegan chocolate chips or carob chips
  • Peanut butter

Directions

Break your graham crackers into halves. Melt chocolate in the microwave or over the stove until it’s just spreadable (not runny). Spread over crackers, top with some ice cream, and drizzle/add a dollop of peanut butter on top. Leave them open-faced or add another graham cracker on top (there was a little too much “crunch” when I added a second graham cracker, but it’s up to you). Freeze for about an hour. Enjoy.
